Easy Chunky Monkey Blondies

Chunky monkey blondies are perfect for a breakfast treat. Sure sweets aren’t always the best choice but we can’t resist them when they are siting on the counter starting at us. So we occasionally indulge. We tend to make these blondies on the weekend so it feels like a treat that’s ok to have for breakfast. They are super simple to make too which is a big plus.

These blondies smell absolutely amazing while they are baking. Like banana bread but, sooo much better. After all they have chocolate chips in there. There is something about bars and brownies that always go over well in our house. They are perfect for after school and late night snacks.   

There is something about the mixture of banana chocolate and brown sugar that really makes these one bowl bars super yummy. We love them warm with a big scoop of vanilla ice cream for dessert. What is great about this recipe is we always have the ingredients on hand so they are easy to whip up. So they are perfect when you need a quick dessert for the family. These bars are great to bring to a potluck or family gathering to. They will be a huge hit.

These chunky monkey blondie bars are so simple to throw together. Not to mention you get to use all those extra bananas you have on hand. I don’t know about you but we always have extra banana. We love eating a fresh banana but sometimes they tend to get a little over ripe and we like them pretty firm. So they are perfect for a recipe like this.

How to make Best Chuncky Monky Blondies:

  • Preheat oven to 350 degrees and line a 9×13 baking pan with parchment paper.
  • Using a standing mixer, beat together the butter, eggs, brown sugar, sugar, salt, and vanilla until combined and smooth.
  • Gradually beat in the flour and mashed banana until combined.
  • Fold in 2 cups of chocolate chips.
  • Pour the batter into the baking dish.
  • Sprinkle the remaining chocolate chips onto the top of the brownies.
  • Bake in the oven for 30-35 minutes or until a toothpick comes out of the center clean.
  • Allow to cool before cutting into bars.

Can I add other ingredients to these blondies? 

Yes you can! You can add nut of course. If you like coconut that would make a nice addition. You can add peanut butter chips or white chocolate chips. Or a mix of all the chips you like.

We love caramel chips and peanut butter chips best. I swear we have tried every chip in this recipe you can think of. There in no bad chip combo for us. This is such a versatile recipe. Really you could add almost anything. Use your imagination!

What’s the difference between a brownie and a blondie? 

The main difference between a blondie and a brownie is the chocolate. Blondies usually have a rich vanilla flavor but these chunky monkey blondies have been changed a bit by the bananas so they have a nice added surprise to them. 

Can these blondie bars be frozen? 

Yes they sure can! To freeze them wrap them in plastic wrap then place in a freezer bag. When your ready to eat them place in the fridge over night to defrost.

Ingredients
