Ingredients

  • 6 ounces bacon 6 slices bacon , chopped and browned
  • 1 head romaine lettuce about cups chopped, rins and dried
  • 2 chicken breast cooked
  • 1 large avocado sliced
  • 1 cup cherry tomatoes cut in half
  • 3 hard boiled eggs
  • ½ cup red onion thinly sliced
  • ½ cup blue cheese crumbled ( or feta cheese)
  • 2 tablespoons parsley finely chopped

Salad Dressing:

  • 3 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 garlic clove finely minced
  • cup extra virgin olive oil
  • teaspoon black pepper
  • ¼ teaspoon salt

Instructions

  • 1 Saute chopped bacon in a( about 4- skillet until browned and crisp.(about 4-5 minutes) Transfer to a paper towel lined plate
  • 2 Cook 3 hard boiled eggs. Cool a bit then peel and quarter
  • 3 Chop, rinse and dry romaine lettuce well and arrange on a platter. Arrange remaining ingredients on romaine (chicken, avocado, tomatoes, eggs,onion,blue cheese and bacon) in rows or clusters over salad
  • 4 Transfer dressing ingredients to a jar. Shake really well! You can drizzle over the whole salad or let everyone add dressing to their own taste
