This Coconut Mojito is a taste of the tropics in every sip. Lime juice, cream of coconut, brown sugar, and mint leaves come together to create a delicious, refreshing cocktail that’s perfect for the summer months.

We love to entertain guests any time of year, but we particularly love having people over during the summer. Barbecues, potluck parties – you name it. If we can have a party, we will. And when we do have a party, we love to serve up delicious cocktails that really embrace what summer fun in the sun is all about. That’s why we love serving this coconut mojito.

Coconut Mojito

There’s nothing quite as delicious as an ice-cold, tropical cocktail on a hot summer day, and that’s just what you get with this tasty recipe. Coconut rum and cream of coconut provide a tropical base that’s then mixed with brown sugar for extra sweetness. Then, we add club soda and mint leaves for a fizzy, minty kick.

Coconut Mojito Ingredients

It only takes a few simple ingredients to make this fresh, tropical cocktail. You’ll find everything you need easily at your local grocery store.

  • Mint leaves
  • Brown sugar
  • Lime juice
  • White rum (Bacardi)
  • Coconut rum (Malibu)
  • Cream of coconut (Coco Real)
  • Club Soda
  • Ice

Coconut Mojito Instructions

Making this cocktail is an extremely simple affair. It’s all just a little shaking and you’re don!

Step 1: Mix and Muddle the Mint and Lime

Add the mint leaves, brown sugar, and lime juice to a shaker cup and muddle to release the mint leaf oil.

Step 2: Combine the Remaining Ingredients Except for the Club Soda

Add a handful of ice, white rum, coconut rum, and cream of coconut. Shake until well-combined and chilled.

Step 3: Finish and Serve

Strain the mixture into a cocktail glass and top it with club soda. Garnish with mint and lime wheels or wedges and enjoy!

Hint: When shaking to chill and combine, you don’t need to go crazy. A good few shakes will do.

Coconut Mojito Tips

This is an incredibly simple cocktail recipe to make. It’s so simple, in fact, that we only have a couple of tips.

Muddling – Be sure you thoroughly muddled the mint leaves so you really get that mint flavor released.

Shaking – When shaking the ice and rum mixture, give it a good shake, but there’s no need to be violent. Just a few good, vigorous shakes.

Ingredients
  • 6 mint leaves plus extra for garnish
  • 1 teaspoon Brown sugar
  • 1 ounce lime juice
  • 1 ounce white rum Bacardi
  • 1 ounce coconut rum Malibu
  • 1 ounce cream of coconut we used Coco Real
  • 2 ounces Club Soda
  • Ice
Instructions
  1. To your shaker cup, add mint leaves, brown sugar, and lime juice.
  2. Muddle to release oils from the mint leaves.
  3. Add a handful of ice, white rum, coconut rum, and cream of coconut.
  4. Shake until well combined and chilled.
  5. Strain into your cocktail glass, and top off with desired amount of club soda.
  6. Garnish with mint leaves and lime wedges. Enjoy!
