Step 1: Brown the Sausage

Add the sausage to a large soup pot and saute it over medium-high heat for 7 minutes until browned. Remove the sausage and drain it on a plate lined with paper towels.

In the same pot, saute the onions and carrots for about 4 minutes. Then, add the garlic and saute for another minute.

Step 3: Add the Broth, Tomatoes, and Sausage

Add the chicken broth, canned tomatoes, and sausage to the pot with the vegetables and bring it to a boil over high heat.

Ingredients

  • 16 ounces Italian hot sausage
  • ½ medium onion finely chopped
  • 3 carrots chopped
  • 4 garlic cloves minced
  • 4 cups chicken broth
  • 28 ounces crushed tomatoes
  • 2 cups refrigerated cheese tortellini
  • 1 cup heavy/whipping cream
  • 3 cups fresh kale optional
  • Salt & pepper to taste

Instructions

  • In a large soup pot, add the sausage and sauté over medium-high heat until

  • Take out the sausage and allow it to drain on a paper towel lined plate.
  • In the same pot, sauté the onions and carrots for approximately 4 minutes,
  • add in the garlic and continue to sauté for another minute.

  • Increase the heat to high and bring the pot to a boil.

  • then reduce the heat to a simmer. Simmer for approximately 10 minutes.
  • Season with salt and pepper to taste and serve.
