We love sweet potatoes, and this recipe is just delicious and so easy. In fact, this may be our new go to recipe for sweet potatoes. It’s a little sweet and a little savory, really easy to prepare, and looks beautiful when served.
It’s a different flavor than the traditional sweet potatoes with lots of brown sugar and marshmallows toasted on top, but it doesn’t disappoint. You’re going to love this one!
We feel that sweet potatoes are often overlooked as big hitters when it comes to side dish options. Most people tend to favor the white potatoes and just have the sweet potatoes as an extra that you can serve up with marshmallows, butter, and brown sugar. But this recipe? This recipe is different.

My family prefers this recipes over the marshmallow and brown sugar recipe. We find this recipe is perfect in flavor and sweetness. Yet this also has a bit of brown sugar also. The blending of all these flavors is really what makes this recipe so delicious.

Sweet Potatoes
Don’t you just love Fall vegetables? We sure do in our family. All the different squash and pumpkins and sweet potato and yams.
We love to buy a mix of all squashes and chop them all up and cook them as a side for dinner. We love sugar pumpkins, hubbard squash, butternut, acorn and kabocha.
Sometimes just simply with some spices and garlic and butter and olive oil you can have the best of flavors. I always make extra because I love having extra for lunch the next day. Just pop it in the microwave and you have a perfect light lunch.
Do you like sweet potatoes?
When I was younger I never liked sweet potatoes or any kind of squash. It’s amazing how your taste changes as you get older. I remember when I was younger the only vegetable I liked was corn and white potato. My how times have changed!
Who thought I would enjoy vegetables like spinach, artichokes, brussels sprouts and broccoli rape. Those vegetables were pretty much staples in our house when I was growing up but I would never eat them. I passed up a lot of good food back then. I quess most of us did as kids. My parents never made me eat things I didn’t like. Seems like it turned out ok because I love them all now.
Garlic Parmesan Roasted Sweet Potato
Imagine serving these garlic parmesan roasted sweet potatoes at your next dinner get together or small dinner gathering. They are topped with shredded paremsan cheeses, minced garlic and fresh herbs. Some of my favorite ingredients all rolled into one!
This roasted sweet potato side dish is a great make ahead dish for the holidays. Prepare it the day or night before you need it. Cover the the top tightly in foil and place it in the refrigerator. A few hours before your ready to bake pull it out of the fridge and set it on the counter. Then when your ready you can place it in the oven to bake.
Can I use coconut oil in place of olive oil?
Absolutely! In fact, it might help add a bit of sweetness to the dish as well. Just know that it will give the recipe a bit of coconut flavor, too but as long as you’re okay with that, it might be just the taste that you’re looking for. We have friends who love cooking with coconut oil. Us not so much.
Is the added brown sugar optional?
It can be. Some people really try to stay away from adding in the sugars since the sweet potato has it’s own natural sugars. We have tried it both ways and prefer it with the brown sugar. It is only 2 tablespoons for the whole recipe but it really does make a tasty difference. So we always add it.

Roasted sweat potatoes have always been a huge hit in our house. Not only during the holidays but as a side during weeknight meals. Sometimes we will make extra potatoes and warm them in the microwave for a light lunch.
Not only are they healthy they are delicious any time of day. Weather you simply bake them or roast your sweat potatoes, you can always add some parmesan cheese, garlic and butter for some extra flavor. They are sweet and savory all at the same time.
I remember growing up never even liking sweet potatoes! I would only eat white potatoes. Amazing how when we are young we have a different palate and don’t like so many thing we end up loving as we get older.

Garlic Parmesan Sweet Potatoes
Ingredients
- 3 extra large sweet potatoes
- 2 Tablespoons olive oil
- 3 Tablespoons butter – melted
- 3/4 cup shredded Parmesan cheese
- 2 Tablespoons Italian seasoning
- 1 Tablespoon minced garlic
- 2 Tablespoons brown sugar
- 1 package of fresh Thyme
Instructions
- Rinse, and peel the sweet potatoes, and with a very long and sharp knife, cut the sweet potatoes in 1/8 inch slices, and set aside.
- Melt the butter in the microwave, and pour the butter into a large (gallon size) Ziploc bag.
- Add the olive oil, Parmesan cheese, Italian seasoning, minced garlic, brown sugar, and thyme, and mix together in the bag
- Place the sweet potatoes in the bag, and zip the bag closed. Coat the sweet potatoes with the ingredients in the bag (you'll have to move them around in the bag with your fingers, and make sure all the slices are coated).
- Place the sweet potatoes in a 9 X 13 dish, lined with parchment paper on the bottom, and lay the slices out in rows, or however you prefer them (see photo).
- Once you've placed all the slices in the dish, remove the remainder of the ingredients left in the bag with a spatula, and top the sweet potatoes with the ingredients.
- Sprinkle additional Thyme on top of sweet potatoes in the dish, and place the dish in the oven at 400 degrees, for 40 – 45 minutes, or until the sweet potatoes are golden brown on the edges, and done in the centers.
- Remove the dish from the oven to a wire rack to cool for a few minutes before serving. Serve, and Enjoy!
