How to make Homemade Funfetti Cookies
Instructions:
- Preheat oven to 375 degrees and spray a cookie sheet with cooking spray or line with silicone mat
- In a large bowl, beat together the butter and sugar until light and fluffy, about 2 minutes
- Add egg, beat well
- Add vanilla and almond extracts, beat
- Sift together dry ingredients, gradually add and beat well
- Note: dough will be very stiff
- Stir in sprinkles being careful not to overmix or the sprinkles will start to bleed into the dough
- Use a cookie dough scoop and roll dough into 1 inch balls
- Roll cookies in addition sprinkles, if desired
- Bake for 8-10 minutes for a softer cookie or 11-12 for a crisp cookie
- Cool on wire rack
- Store in airtight container
What is the flavor of these funfetti cookies?
They’re a bit of a mixture between sugar cookies and almond cookies they have the texture of sugar cookies as well. The added almond flavoring really kicks the taste up on these simple cookies. There is just a bit of almond extract in these cookies but that is all you need to get that perfect flavor.
Why is the dough so firm once mixed together?
Don’t worry! This is how the dough is supposed to be. It should be firm and stiff once it’s mixed so please don’t think that you’ve done anything wrong. It’s just how the combination of the ingredients combine to make this cookie dough. You want it firm enough so you can roll it easily. Because the dough is firm and stiff there is no chilling time required! Yeah!!
Why is my cookie dough changing colors?
If you’re noticing that your cookie dough is starting to change colors after you’ve added in your sprinkles, this is because you’re mixing too much and the sprinkles are starting to break apart and “bleed” into your dough.
This isn’t really a cause for concern as the cookies will stay taste just fine. But if you aren’t wanting them to be a specific color just make certain that you’re not overmixing the sprinkles once you add them in.
