If you’re living keto or simply just trying to cut unnecessary carbs, you might be missing some of your favorite dishes. While we aren’t doing keto, we do enjoy creating meals that cut down on empty carbs to help us eat just a bit more healthily.

To that end, we’ve added a new low carb option to our rotation. Our jambalaya foil packets combine the zesty flavors of this Cajun classic with cauliflower rice to create a dish that’s big on flavor, low on carbs, and always satisfying.

There’s no need to make your own cauliflower rice. You can find cauliflower rice in the frozen section of your grocery store.

  • Protein: You can also use chicken or pork in this recipe.

  • Potatoes: Although not traditional, the flavors in these packets pair perfectly with potatoes, replacing rice. We recommend baby potatoes cut in half so they fully cook by the time the rest of the ingredients are done.

How to Make Jambalaya Foil Packets

  1. Mix the vegetables, garlic, 1 tsp of Cajun seasonings, and tomato paste in a bowl.

  1. Mix the shrimp, sausage, and remaining seasoning in a second bowl.
  1. Place four long sheets of foil on a flat surface. Then, divide the vegetable mixture between them, followed by the shrimp and sausage mixture.

  1. Bring the long ends of the foil together and fold them to seal. Then, bring up the sides and fold them, as well, completely sealing in the ingredients. Place the packets on a baking sheet and bake at 375°F for about 20 minutes.

  • Be sure to thoroughly drain your cauliflower rice after cooking to avoid a soggy dish.
  • It’s important to season the veggies and meat in separate bowls to ensure everything is evenly coated.
  • Fold the foil just enough to seal it. You want a nice pocket for the steam to collect for even cooking.
  • Be very careful when opening your packets, as steam will come out. Don’t burn yourself!

Ingredients

  • 1 pound Shrimp peeled and deveined peeled and deveined
  • 12 ounces andouille sausage sliced
  • 3 teaspoons Cajun seasoning
  • 3 cups Cauliflower rice cooked and drained well of excess water
  • ¼ Onion chopped
  • ½ cup Celery chopped
  • ½ Red bell pepper chopped
  • ½ cup Diced tomatoes drained
  • 1 tablespoon Tomato paste
  • 2 teaspoons Minced garlic

Instructions

  • Preheat the oven to 375 degrees.
  • Add the cauliflower rice, onions, peppers, celery, diced tomatoes, tomato paste, minced garlic and 1 tsp of the cajun seasoning to a mixing bowl. Stir to combine.
  • Place the shrimp and sausage in another mixing bowl, and season with the remaining cajun seasoning.
  • Lay four long sheets of tin foil out on a flat surface.
  • Place ¼ of the cauliflower rice mixture into the center of each piece of tin foil.
  • Top with ¼ of the sausage and shrimp each.
  • Bring the long ends of each tin foil sheet at the top, and fold closed.
  • Roll up the remaining sides of the tin foil sheets, and fold over to form a packet.
  • Place the packets on a baking sheet, and bake for 20 minutes.
