With a bed of seasoned parmesan cheese that gets crispy as it cooks and a perfectly cooked cabbage steak on top, this is one cabbage steak recipe that stands out from the rest.

🔪 How to Make Parmesan Roasted Cabbage Steaks
- Combine the parmesan cheese, oil, and seasonings in a medium bowl.
- Place the cheese mixture in 4 equal mounds per baking sheet, spreading the mixture out just enough to be about the size of your cabbage steaks.
- Add a cabbage steak to each mound and bake until the cabbage is tender-crisp and the parmesan creates a crust on the bottom of the steaks.
- Then, use a spatula to flip the steaks. Bake again for another few minutes to get a good color on the cheese.
💭 Tips
- To bake both batches simultaneously, place one pan on the top rack and the other on the bottom. Then, halfway through cooking, rotate the pans 180 degrees and move the bottom pan to the rack and the top pan to the bottom rack.
- To ensure your parmesan mixture is approximately the same size as your steaks, spread it out until it’s just a bit smaller than the steaks. Then, gently press the steaks down into them, spreading the cheese a bit further to the perfect size.

Refrigerate leftovers in an airtight container for up to 3 days.

Any cabbage works well for cabbage steak, and each variety brings its own unique flavor and texture. Napa cabbage is very tender and caramelizes nicely, creating a cabbage steak that is super-tender on the inside and nicely caramelized on the outside. Green cabbage is more robust, yet still slightly sweet. Red cabbage has a more pronounced flavor that mellows slightly when roasted, making it also work well.
Burned cabbage steak is most often the result of using the wrong oil. Cabbage steak is cooked at a high temperature, so an oil with a high smoke point is essential. Oil with a low smoke point will develop a rancid flavor and cause the cabbage to burn rather than brown.

Parmesan Roasted Cabbage Steaks

Ingredients
- 1 cup shredded parmesan cheese
- 3 tablespoons oil
- 1 tablespoon dried italian seasoning
- 2 teaspoons garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 1 head cabbage cut into 8 equal slices
Instructions
- Preheat your oven to 450 degrees. Line 2 large baking sheets with parchment paper and set aside.
- In a medium bowl stir together the parmesan cheese, oil, Italian seasoning, garlic powder, salt, pepper and paprika in a small bowl until well combined.
- Place the cheese mixture in 8 equal mounds on the 2 baking sheets (4 on one and 4 on the other).
- Spread the cheese mixture out about the size of each cabbage slice.
- Place a cabbage slice down on each cheese mixture spot.
- Bake in the oven until cabbage is tender-crisp and Parmesan creates a golden brown crust on bottom of cabbage, 16 to 18 minutes, rotating pans between top and bottom racks and from front to back halfway through or just bake one pan at a time.
- Remove the cabbage from the oven and let sit for 2-5 minutes.
- Use a spatula to carefully flip the cabbage and cheese crust over.
- Place the pans back in the oven and bake another 8 minutes.
- Serve!
