Easy Fudge Recipe

I first thought I would make this recipe as a frosting for some cookies I was making but then as I was mixing it, I saw how it was coming together and thought hmmm I bet this would set up really good as a fudge.

I put the ingredients in a pan and a little while later I had this yummy fudge. This does make a great frosting also btw. I have used it for cookies and muffins. Just don’t let it set up or it will be too hard to spread. It is also great on Low Carb waffles for a change of pace!

Delicious Low Carb Cream Cheese Fudge!!

You can add more sweetener to this also. I use about 1/2 cup because it’s enough for me. But taste it as you go and add more if you like it sweeter. Also you can add nuts if you like.

This delicious fudge  treat will keep you from being tempted by high carb treats.  And It’s rich, creamy, delicious, and EASY!  Oh and don’t we all love easy and delicious!  There’s no need to feel guilty indulging in this yummy low carb treat!

Ingredients

  • ½ cup Butter I use salted
  • 2 oz. Bakers Unsweetened Chocolate
  • 1 Tablespoon Vanilla
  • 8 oz. package Cream Cheese  softened
  • ½ Cup Slenda or Stevia  or any sweetener or your choice to taste (adjust to your taste)

Instructions

  • Place butter and chocolate in a small pan and melt oven low heat. When chocolate and butter is just melted add vanilla and sweetener and blend together.
  • Place cream cheese in a medium bowl and pour chocolate mixture over it.
  • With a hand mixer mix about 2 minutes.
  • Pour into a greased  pan. I use a 6 x 8 pan and I freeze it and cut into squares.

Notes

  1. Beat fudge/frosting until fluffy and all ingredients are incorporated well.
  2.  I keep fudge  stored in the freezer . Out of site, out of mind.
    *  This makes a great frosting for muffins in a minute or low carb  cookies ect.

  4. By vanilla, do you mean vanilla extract? This looks so good and super easy, I think I am going to make some this weekend! Keep the fabulous LC recipes coming!

    1. Yes. Not sure what recipe you mean but yes I would always mean vanilla extract

  5. I was referring to the low carb cream cheese fudge. Thanks!

  6. I would love to know how many carbs there actually are in the cream cheese fudge.

    1. It’s in the bottom of the recipe card of course it depends on how big or small you cut the fudge

  7. Could I use coconut oil instead of butter, thought it might set a bit harder, am dying to give it a go

    1. You could try it. We don’t like coconut oil enough to use it that way but it would set it fine I would think

This is my first time making this recipe. I have to say, all I could taste was the cream cheese. I ended up doubling the Splenda, and adding peanut butter to calm down the cream cheese taste.
I’ll make it again, with some more tweaking.

    1. Dianna you could add more cocoa to it or less cream cheese. We like the sweet, tartness flavor since doing low carb or keto we don’t like really sweet things.
Like any recipe it is adaptable

      1. Can you use cacao powder?? I have all the ingredients but bakers chocolate 😬😰 how would I make that work though

        1. We have never made it with cocoa powder but I would think the consistency would not be as good

  9. Have you tried honey instead of of Splenda? I’m curious how it would turn out.

    1. No we haven’t. This has always worked great for us so we have never changed it

    2. Did you try it with honey ? How much did you use& did it taste good with it?

Tastes exactly like chocolate cheesecake to me. Very good. Maybe the name throws some people off expecting a more chocolate brownie flavor. I’m calling them chocolate cheesecake brownies lol. Thanks for sharing this easy delicious recipe.

    1. So glad you enjoyed this! We really love this recipe and also use this as a frosting when we are trying to watch our carbs

  11. Carolyn Lester says:

Can’t wait to try this! I’m so excited, especially with Valentine’s being just around the corner.

    1. I hope you enjoy. we always keep a batch in the freezer.

  12. Susan Chausse says:

Wish to know if I could replace the diet splendra with a real sugar as we react negative to these diet products

    1. Yes you can you can but then this wouldn’t be a low carb product.

  13. Did you use granular or confectioner sugar in the fudge?

    1. No it’s low carb if you use those sugars it would defeat the purpose. The recipe card has the full low carb recipe

  14. Kathy lee says:

Hi! I can’t wait to try this fudge recipe. If I were going to make this peanut butter fudge, how much peanut butter should I mix in? Thanks in advance!

    1. I would say 1/2 cup to get a chocolate peanut butter fudge. adding too much won’t let it set up as good and will keep it very soft

  15. Hi, I’m going to use 1/2 cup of sugar, because I don’t like Splenda, Stevia or artificial sweeteners. I just like the idea that you’re using cream cheese and that it’ll taste more like a cheesecake. I also don’t care if it’s low carb or not.

    1. If you’re are not worried about it being low carb that will work fine!

  16. 5 stars

Delicous! I actually reduced the amount of sweetener as my fav snack is 90% dark chocolate. This stuff is so good!

    1. So happy you liked it. We have some in the freezer at all times! 🙂
