If you’re like us, you love pie. Pie in any form is amazing. It’s just happiness in a baking tin. The only thing better than pies is mini pies. They’re so much fun, so easy to eat, and who doesn’t want an entire pie all to themselves?

We love making these mini lime pies when the warmer weather begins to approach. After a long, gray winter, any piece of warm weather anything is always welcome. And of course, as we already mentioned, pie is the best. It only makes sense, then, to make tasty little pies that are full of summer flavor.

Mini Lime Pies

These little bites are the perfect dessert to serve any time. They’re full of flavor and so easy to make, they’re always a great choice. They’re fancy enough to bring to parties, but that simplicity also means they’re great for a quick dessert recipe or even afternoon snacking.

It all starts with min tart shells. Then we add a sweet and tangy lime filling. Finally, we top it with whipped cream and lime zest for even more lime flavor. The result? One of the best little pies you’ll ever eat!

Mini Lime Pies Ingredients

It only takes a few ingredients to make these pies. You’ll find everything you need at your local grocery store.

For the Pies

  • Frozen mini tart shells
  • Sweetened condensed milk
  • Lime juice
  • Sour cream

For the Topping

  • Whipped cream (in a can if possible)
  • Lime zest
  • Lime slices

Mini Lime Pies Instructions

Making these pies is as simple as gathering the ingredients. It only takes a few simple steps.

Step 1: Bake the Tart Shells

Place the frozen mini tart shells on a baking sheet and bake for about 10 minutes at 375 degrees. Remove them from the oven and allow them to cool.

Step 2: Make the Lime Filling

Mix the condensed milk, lime juice, sour cream, and lime zest in a large bowl.

Step 3: Bake Again

Spoon the filling into the tarts and bake them for 7 to 10 minutes. Let them cool completely, then refrigerate them for an hour.

Top the chilled mini lime pies with whipped cream, lime zest, and a lime quarter wedge.

Hint: Always bake the pie shells first so they get nice and golden on the second baking.

Tips

Always Par Bake: Don’t skip the initial crust baking. It allows the crust to cook to perfection on the second baking.

Canned Whipped Topping: Is your friend! These are mini pies. It’s hard to spoon whipped topping onto them. It won’t change the flavor, but it will be prettier.

Key Lime: Buy key lime juice to make these key lime pies.

Ingredients

For the Mini Lime Pies: 

  • 15 frozen mini tart shells
  • 14 oz. sweetened condensed milk
  • 6 tbsp. (approx. 3 limes) – to make this a Key lime pie, you may purchase key lime juice from your favorite store
  • ¼ cup sour cream
  • 1 tbsp. sour cream
  • 1 Zest of lime
  • 6-8 lime slices, cut into quarters (for a total of 12-16 quarter pieces)

For the Topping:

  • Real Whipped cream ( we use the one in a can, or you can make your own)
  • 1 Zest of lime
  • 6-8 lime slices, cut into quarters (for a total of 12-16 quarter pieces)

Instructions

  • Preheat the oven to 375 degrees F.
  • Line frozen mini tart shells on a baking sheet and bake for about 10 minutes
  • Remove from the oven and allow to cool.
  • In a large bowl, mix together condensed milk, lime juice, sour cream and lime zest.
  • Spoon the pie filling into the baked tarts.
  • Bake for an additional 7 to 10 minutes.
  • Allow to cool completely then refrigerate for one hour.
  • Once the pies are chilled, top off with whipped cream, lime zest and a lime quarter wedge. Serve and enjoy!
