Overnight Chia Pudding – Chia seeds are supposed to have many health benefits. Chia seeds have been getting a lot of positive press lately.
They are quite the super food and make a perfect addition to any low carb diet because they are all fiber. They help keep you full a good long time.
Chia seeds are mini powerhouses packing more calcium than milk, more antioxidants than blueberries and more Omega-3 than Salmon.
Their texture can take a little getting used to, but they are so versatile and are a great protein-packed addition to many recipes because of their ability to thicken and gel. It took me a bit getting used to them.
And it makes a pretty good low carb pudding too. I like this best when it sits for a two days. But sitting longer is fine too.
Overnight Chia Pudding is a simple and a delicious way to easily get the benefits of chia seeds. It takes just minutes to make and has great protein and nutrients. It’s a great breakfast option.

Overnight Chia Pudding
Ingredients
- 2 cup unsweetened almond milk
- ⅓ cup fresh berries chopped ( I used strawberries)
- ½ cup chia seeds
- 2 Tbsp stevia
- 1 tsp vanilla extract
Instructions
- Mix everything in a mason jar. Shake well and place in the fridge. Shake again after an hour. You can also mix this in a blender or Magic Bullet also. You can also add any fruit you like before you eat it or some pumpkin. I love it with pumpkin and cinnamon.
- Refrigerate overnight . Garnish with berries before serving
