Pan Seared Herb Crusted Pork Chops are one of my favorite recipes to make for a weeknight meal and for a company dinner. First they are super simple to make.  And there is nothing better than a simple recipe.

 

When we see a recipe that has a long list of ingredients I tend to run the other way! This is basically pork chops, butter and spices. That I can handle really well. And the end results are amazing. 

 

 

Pan Seared Herb Crusted Pork Chops taste so amazing because they sit in the fridge covered in the spices for 24 hours! YES 24 HOURS!! Before you sear the pork chops you will want to knock off some of the rub. Not all of it but about half of it . Half the spices will be enough remember the chops have had 24 hours of sitting getting all that flavor! 

 

 

I use a cast iron pan to cook these pork chops. I sear the sides first then they get a great sear on one side then they can easily  go in the oven.  I like to use butter and olive oil mix for frying. Just a tablespoon of olive oil and 2 tablespoons of butter to start. It will keep the butter from burning. 

Your going to start these chops on the cooktop then finish them in the oven.  the internal temp should be about 145 degrees 

 You can of course let these stay in the fridge just a few hours but the flavor will not be anywhere as good as they would be if you leave them for the full 24 hours.

Always make sure you let your meat come to room temp before you start cooking it. That means at least 30 minutes sitting out. It makes such a big difference in how your meat cooks and tastes.  

 

These chops are delicious served with some Easy Sauteed Vegetables and Rice 

or Garlic Parmesan Roasted Potatoes .  Such a simple meal and so delicious!!

Ingredients

  • 4 1/2 -3/4 in thick bone in pork chops
  • 1 tsp sea salt
  • 1 tsp smoked paprika
  • 2 tsp garlic, finely minced
  • 2 tsp onion powder
  • 2 tsp thyme
  • ½ tsp cayenne, or to taste
  • 1 tsp ginger
  • 4 tbsp butter
  • 1 tbsp olive oil
  • sea salt to taste

Instructions

  • 1. Preheat oven to 425°F Dredge the pork chops in the spices except for the sea salt. Let them sit in the fridge for 24 hours. 
    2. Heat frying pan over medium high heat with the oil and 2 tbsp butter. Sprinkle sea salt on both sides of pork chops. Place the chops into the heated pan and sear until golden brown (about 5 minutes each side).
    3.. Add the rest of butter in the pan and place the  pan into the oven for about 10 minutes or until chops reach 145 degrees.
