Step 3: Cut out the cookies

Using sugar in place of flour, roll out the dough until it’s about ⅛” thick. Cut the dough into 2” squares. Place a small dollop of jam in the center of each square, and grabbing opposite corners, press them together until you have a firm seal. Press gently down on the center to keep the cookie from unraveling while baking.

Step 4: Bake the cookies

Set on a baking tray about an inch apart and place in the 350 degrees preheated oven to bake for 15 minutes, or until the edges of the cookies are just lightly golden brown. Remove and place on a cooling rack.

Step 5: Top the cookies with white chocolate

In a small microwave safe bowl, slowly melt the white chocolate chips until smooth. Place the white chocolate in a sandwich sized ziploc bag and cut a tiny hole in one corner to drizzle the chocolate on top of each cookie.

💭 Tips

Here are a few tips that you can use to ensure that these cookies turn out perfectly for you when you make them:

  • Make sure that you start with room temperature cheese cheese and butter so that you get a smooth and even cookie dough.
  • To prevent the cookies from sticking to your baking sheets, I recommend that you line them with parchment paper or a silicone baking mat.
  • It’s important that you have patience and allow the jam to thicken enough so that it doesn’t run off the cookies while they are baking.
  • Make sure that the jam is cooled before you add it to the top of the cookie dough.
