- Toss the sweet potatoes with olive oil, thyme, salt, and pepper. Then, place them on one side of a prepared sheet pan.

- Toss the Brussels sprouts with olive oil, vinegar, salt, and pepper. Place them on the other side of the sheet pan.

- Bake the veggies for 15 minutes.

Sheet Pan Kielbasa and Veggies
Equipment
- knife and cutting board
- Mixing Bowl
- large rimmed baking sheet
Ingredients
- 14 ounces kielbasa Or your preferred type of sausage
- 3 cups diced sweet potatoes 2 medium sweet potatoes
- 3 cups brussel sprouts halved
- 2 Tablespoons olive oil divided
- 1 Tablespoon balsamic vinegar
- ½ Tablespoon fresh thyme
- Salt and pepper to taste
Instructions
- Spray a baking sheet with cooking spray and set aside.
- Place diced sweet potatoes in a small bowl. Drizzle with 1 Tbsp olive oil, fresh minced thyme and salt and pepper to taste. Toss to coat. Pour out onto one side of your sheet pan.
- Place halved brussel sprouts into a small bowl. Drizzle with 1 Tbsp olive oil, balsamic vinegar and salt and pepper to taste. Toss to coat. Pour onto the other side of your baking sheet.
- Bake for 30 minutes.
- Meanwhile, slice the sausage into smaller pieces. Halfway through the baking time (15 minutes), remove the sheet pan from the oven and place the sausage on top of the veggies. Continue to bake for another 15 minutes.
- Remove the pan, serve and enjoy!
