Slow Cooker Broccoli Chicken Soup is an easy throw together meal. This easy creamy throw together meal is the answer to your weeknight dinners.
It’s all made ahead of time and that my friends is my favorite thing about the slow cooker. You can throw everything in the night before or in the morning, whichever you choose and make a meal that not only is amazing, cozy comfort food but it’s all cooked and ready to eat when you walk in the door at night.

Is it cold and snowing where you are? We are having such an odd winter. It’s been anywhere from in the 60’s to in the high 20’s. But only a little bit of snow in November. This is not my kind of winter!
Slow Cooker Broccoli Chicken Soup is the perfect soup for cold wintery weather that even your kids will love and it is a great way to hide some vegetables if your kiddos aren’t veggie lovers.
We love meals that are heart enough like this soup that are enough to actually be a meal itself. A couple of bowls of this soup and you will be full. It is a thick and hearty soup. Almost like a chowder you could say. Processing all the vegetables in the food processor helps thicken it up.
How To Make Slow Cooker Broccoli Chicken Soup:

2 large chicken breast

2 broccoli heads

1 carrot
-
1 celery
-
1 onion

1 tbsp Chicken base
-
2 cups water
-
1 cup of heavy cream

2 tsp of seasoned salt (¼ onion powder, ¼ garlic powder, ¼ salt, ¼ pepper)

1 tbsp of cornstarch

1 tsp of olive oil
In a skillet, add olive oil and heat on med/high heat. Add chicken and brown on each side until fully cooked. While chicken is cooking prep your veggies. Add the carrot, celery and onion to the food processor and chop until finely chopped.
Remove the chicken from the heat and set aside. In same skillet add the carrot, celery, onion mix and saute until tender. Now prepare the broccoli by removing all stems from the broccoli.
Chop the broccoli stems with the food processor.
Dice the cooled chicken and add to the slow cooker as well as your veggies.
In a bowl, combine chicken base and water and mix thoroughly. Add to the slow cooker. Add in the heavy cream, seasoned salt and cornstarch to the slow cooker and seal the lid.
Cook on High for 4 hours.
After it’s done remove lid and stir thoroughly.

- 1 tsp chicken base ( I used better than bouillon)
- 2 cups water, more if you like a runnier soup
- 1 cup heavy cream

- 1 tbsp cornstarch
- 1 tsp olive oil
