Strawberry Lemon Blondies are amazing! We love the combination of flavors and so has everyone else that we’ve shared them with!
One of the best parts about this simple recipe is that it takes less than an hour to make. When you’re craving something sweet, time is of the essence!
The added lemon juice gives this recipe such a fun citrus kick. The fresh strawberries will have you thankful for greenhouses and gardens all over the world.
This is one delicious dessert that really does make you want to kick up your feet and just savor every bite. This is the perfect dessert for a summer party, potluck or BBQ. Sere this with a glass of our Pineapple Strawberry Lemonade. They go perfectly together!

I’m pretty sure your going to love these bars. You will be making them over and over again! For a double batch use a 9×13 pan. That’s what we do if we are taking these to a family get together or barbecue.
How to make Strawberry Lemon Blondies
- Preheat oven to 350 degrees F. Line an 8×8 baking dish with parchment paper or grease with non-stick cooking spray.
- In a large mixing bowl, cream butter and sugar. Add in egg and beat until incorporated. Add lemon juice and stir.
- In a separate bowl, whisk 2 cups of the flour, baking powder, and salt until combined. Add the flour mixture to wet ingredients bowl and stir until completely mixed in.
- In a small mixing bowl, toss the strawberries with the remaining 1/4 cup of flour. Add to the blondie batter and fold in.
- Pour into prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until set. Let cool on rack.
- In a small bowl, whisk the powdered sugar and lemon juice until smooth. Drizzle and spread over the cooled blondies and let set before cutting.
Do I have to us real lemon juice for this recipe?
Yes we recommend you do. Fresh squeezed lemons will give you the best flavor for these bars. The bottled stuff can not compare to what real lemons will give you for flavor.
Will frozen strawberries work for this recipe?
That’s a big fat no!! The reason for that is because once the strawberries become unfrozen, they’re going to let out a whole bunch of liquid into the dessert.
And this means that there is a really good chance that the entire dessert will become soggy and watered down and pretty much ruined before you get the chance to take a bite.
Make this with fresh strawberries only. They are available all year long in my market, though not as good in the winter. But much better than frozen any day!
Why are these called blondies?
Because of the coloring of how they turn out. Regular brownies are “brown” and since these are lighter “blond” coloring, it just makes sense. You could call them Strawberry Blondies and just leave out the lemon portion if you want. And if you share them with anyone, they’ll get a sweet kick to the mouth once they taste that lemon. Don’t worry, it’s a good surprise!

Ingredients
