We love peanut butter cups. They are one of our favorite treats to keep on hand when we have a chocolate craving. So, we came up with these chocolate chip peanut butter cookie bars, we knew that we were onto something great.

🔪 How to Make These Peanut Butter Cup Cookie Bars
Making these homemade cookie bars is easy. Just follow these step-by-step instructions or check out the full recipe in the recipe card at the bottom of this post.
Step 1: Mix the wet ingredients
In a large bowl, whisk the melted butter and both sugars until smooth. Add in the eggs, one at a time, and whisk. Add in the vanilla, baking soda, and salt and whisk until incorporated.
Step 2: Add the dry ingredients
Add in the flour, about a third of it at a time until well mixed. Use a spatula to fold in the chocolate chips. Divide the dough in half and press half of the dough into the bottom of a 9” x 13” pan that’s been sprayed with nonstick cooking spray. Set aside.
Step 3: Make the peanut butter filling
Cut the peanut butter cups into halves or quarters and spread on top of the bottom layer of dough. In a small bowl, whisk together the condensed milk and the peanut butter until combined. Pour over the peanut butter cups/dough, leaving about an inch margin around the entire pan.
Step 4: Finish the bars and bake them
Using your hands, press the remaining cookie dough into flat pieces and cover the entire pan, pressing down on the edges to seal in the milk layer. Place in the 350 degree preheated oven and bake for 25-30 minutes, until it’s a light golden color and set in the middle. Remove and allow to cool.
Step 5: Finish the chooclate ganache
Melt the remaining chocolate chips and place in a small ziploc bag make a very small cut in the edge and drizzle over the entire pan. Allow bars to cool before slicing and serving.
