Making this hamburger pasta casserole is super easy. First, you cook the ground beef until it is just cooked and drain any extra fat. Then add the red and green chopped peppers, onions, and minced garlic.
From there, continue to cook until veggies are just tender. Don’t overcook the vegetables. Remember this all gets baked later. If you cook down the vegetables too much at this point, you’ll end up with mush.
In the meantime, in a medium pot boil water and cook 12 oz of your favorite pasta. I use something different all the time. It really depends on what I have in my pantry that might already be open or what I just happen to grab. any pasta will do really. The choice is yours.
After the pasta is cooked, mix it with Parmesan cheese, cream cheese, and sour cream to get all that creamy cheese goodness ready for baking. I do this in the pot I cooked the pasta in. Then I pour it into a casserole dish that I spray with cooking spray.

Ingredients
- 1 lb ground beef
- ½ small green pepper, diced
- ½ small red pepper, diced
- ½ medium onion, chopped
- 2 medium garlic cloves, minced
- 8 oz cream cheese, at room temp or microwave for a minute to soften
- 1 cup sour cream
- 1 cup Parmesan cheese
- 1 cup cheddar cheese or mozzarella
- 12 oz pasta of your choice cooked al dente
- 3 cups pasta sauce of your choice
- salt and pepper to taste
Instructions
- Preheat your oven to 350°.
- In a large skillet over medium-high heat, saute the hamburger and cook until almost cooked through.
- Add the onion, peppers, garlic salt and pepper ad cook until the veggies are cooked through.
- In a medium saucepan boil water for pasta . Add pasta and cook until pasta is just al dente. Do not over cook as the pasta will continue to cook in the oven. Drain.
- Add the cream cheese. If you didn't leave it out at room temperature you can microwave it for a minute in the microwave. Add sour cream and Parmesan cheese.
- In a sprayed 9"x 13" casserole dish, add the pasta mixture. Then add the hamburger mixture and sauce on top and stir until everything is loosely combined.,
- Top with the shredded cheddar or mozzarella.
- Bake at 350° for 25-30 minutes, or until the casserole is heated through. Serve immediately.
