- Egg Whites: They’re the base of the filling, adding protein and holding everything together like a thin omelet layer.
- Tortillas: They turn the whole thing into a quesadilla, giving you that crispy, handheld structure.
- Mozzarella Cheese: Melts everything together and adds that gooey, cheesy goodness you want in every bite.
- Bacon: Brings the salty, smoky flavor that really makes the dish pop.
- Spinach: Adds freshness and a little balance to all the rich, cheesy, bacon-y goodness.

How to Make Egg White Quesadillas
This is a quick overview of the steps needed to make this recipe. You can find the full instructions in the recipe card at the bottom of this post.

- Add half the egg whites to a prepared skillet and top with some of the spinach, bacon, and cheese.

- Press a tortilla gently onto the mixture. Then, cook until the egg whites are almost done.

- Flip and top half the egg whites with more spinach, bacon, and cheese.

- Fold the tortilla over to form a quesadilla, then cook until brown and crispy on both sides. Repeat until all the quesadillas are made and enjoy!
Expert Tips
- Don’t Overfill: Overfilling the quesadillas will make them hard to flip and cause the filling to ooze out as they cook.
- Keep the Heat at Medium: Cooking on medium heat ensures the inside is hot and melty while the outside remains golden and crispy, not burned.
- Apply Gentle Pressure: Applying gentle pressure while the quesadillas cook allows the filling to melt and meld, keeping it inside where it belongs.
