Maple Pecan Butterscotch Bread Pudding

Maple Pecan Butterscotch Bread Pudding is a tasty weekend breakfast treat. Bread pudding made with pure maple syrup, pecans and butterscotch chips. So decadent!

 

 

Bread pudding fans just might just go crazy over this yummy Maple Pecan Butterscotch version. Toppings like whipped cream, butterscotch chips and a butterscotch drizzle make this dessert absolutely irresistible.

We have always loved bread pudding. There is something about the softness and sweetness of the bread that soaks up whatever flavoring you add to it that just makes bread pudding always a winner in my book.  A good bread pudding starts with stale, dry bread to soak up the creamy, eggy goodness that is sweetened with sugar and vanilla usually and honestly if that’s all you do, that can be enough.

Now add some maple syrup, pecan and butterscotch chips along with some brown sugar to the mix and your bread pudding becomes a scrumptious, decadent treat! It takes planning to make bread pudding. First you need day old bread.  I love bread so I always cut a piece off and slather it with butter. My little treat to myself.

 

Bread pudding is always best served warm.  If you have any leftovers slice it and just pop it in the microwave for about 30 seconds then drizzle some extra sauce on it. It will be just as delicious as it was when it first came out of the oven.  

 

Maple Pecan Butterscotch Bread Pudding will make about 8 servings but it is on the rich side so if your family and friends don’t complain you might be able to get away with cutting the slices a little smaller and getting away with a few more servings. I can’t get away with that in my family!

HOW TO MAKE MAPLE PECAN BUTTERSCOTCH BREAD PUDDING:

Preheat oven to 350 degrees.

Prep a 13 x 9-inch baking dish by spraying it with baking spray.

Bread pudding directions:

In a medium bowl add the sugar, eggs, milk, vanilla and maple syrup.

Mix together to combine.

Put your cubed stale bread in a large bowl along with the pecans and butterscotch.

Pour the egg mixture over the bread.

Stir to combine.

Allow this to sit for 10 minutes.

Pour the bread pudding into the prepared baking dish.

Mix together the brown sugar, and butter, in another bowl.

Sprinkle with the brown sugar mixture over the top of the bread pudding.

Bake at 350 degrees for 35 to 45 minutes.

Remove it from the oven. Set aside.

Maple sauce directions:

Prep saucepan by spraying it with baking spray.

Mix together the last five ingredients in a saucepan over medium heat.

Cook, stirring frequently until the sugar is melted.

Pour the sauce over the bread pudding.

Ingredients

  • 3 cups stale Italian bread (cubed)
  • 2 cups sugar
  • 5 large eggs, beaten
  • 2 cupps whole milk
  • 2 tsp vanilla
  • 2 tbsp pure maple syrup
  • ½ cup butterscotch chips
  • ½ cup light brown sugar, packed
  • ½ stick stick unsalted butter (softened)
  • ½ cup pecans (chopped)

Maple Sauce

  • 1 cup sugar
  • ½ cup unsalted butter (melted)
  • 1 large egg (beaten)
  • 2 tbsp pure maple syrup
  • 2 tsp vanilla extract
