This has become a family favorite. It wasn’t very hard to know that it was going to be a favorite. It has all the things my family loves. Buttery Ritz crackers, cream of mushroom soup and sour cream. 

I think most people will agree with that statement. That I think is pretty much why people tend to get so much take out meals. So much easier to go through the drive-thru or pick up the phone than to make dinner.

But when you have a few easy meals in your dinner rotation like this…dinner made at home can be just as easy. And you know what your eating!

Perfect as a weeknight meal but we have served this as a company dinner also to rave reviews. The fact that it can be whipped up in no time makes it a big winner!

If you would like to change this casserole up a bit you can add some green beans, corn or carrots or all three to this before you bake it. I usually par cook the veggies first. Frozen vegetables will do just fine for this. It it just another option for your dinner menu.

Can this Ritz Cracker Chicken Bake be frozen?

Yes it can! You can freeze this if you store it in an air tight container. We don’t normally have much for leftovers but if you do it should be fine in your freezer for 2 months.

Ingredients

  • 6 chicken breasts, boneless, skinless
  • 1 10.5 oz. can cream of chicken soup
  • 16 oz. sour cream
  • cup onions, finely chopped
  • 1 tsp garlic, minced
  • 6 slices colby jack cheese
  • 2 sleeves garlic butter ritz crackers
  • ½ cup butter, melted

Instructions

  • Preheat oven to 350 and spray a 9 x 13 baking dish with nonstick cooking spray.
  • Mix soup, sour cream, garlic and onions together.
  • Coat each chicken breast in mixture and place in baking dish using about half of mixture.
  • Top each chicken breast with a slice of colby jack cheese.
  • Spread remaining mixture over chicken.
  • In a large zip lock bag crush crackers to desired size.
  • In microwave melt butter until almost totally melted.
  • Once butter is cooled down some mix it with crackers in zip lock bag and mix together until crumbs are coated well. 
  • Sprinkle crumbs over chicken and bake for about 40 minutes
