Slow Cooker Cowboy Sandwiches are the ultimate BBQ beef sandwiches. Colby jack cheese, BBQ pulled chuck roast, bacon, diced jalapenos, and crispy fried onions come together to create a BBQ sandwich that will have everyone drooling.
BBQ sandwiches are a staple of summer around here, and one of our favorite ways to make them is in the slow cooker. We can cook our beef until it’s falling apart any time we don’t want to fire up the grill or on rainy days. It’s perfect!

🔪 How to Make Slow Cooker Cowboy Sandwiches
Making these sandwiches is incredibly easy, and we all like that! The majority of the work is done by the slow cooker. After that, you just make the sandwiches and enjoy!
Step 1: Add the Ingredients to the Slow Cooker
Add the chuck roast, BBQ sauce, half of the cooked bacon, the onion, Worcestershire sauce, garlic, brown sugar, and half the diced jalapenos.
Step 2: Cook
Cook on low for 6 to 8 hours or on high for 4 to 6 hours until the meat falls apart with a fork.
Step 3: Shred the Beef
Drain most of the liquid from the slow cooker, reserving about a cup, and shred the beef using two forks.
Step 4: Make the Sandwiches
Add a slice of cheese to the bottom buns. Then, top with shredded beef, bacon, jalapenos, and crispy fried onions. Add the top bun and enjoy!

- 3 pound chuck roast
- 2 cups bbq sauce
- 1 pound bacon cooked and crumbled
- Half an onion sliced
- 2 tablespoons worcheshire sauce
- 3 cloves garlic minced
- ¼ cup brown sugar
- 4 ounce can diced jalapenos
- Sliced colby jack cheese
- 6 Buns
- Crispy fried onions
Instructions
- Into the slow cooker add your beef, bbq sauce, half of the cooked bacon, the onion, worcheshire sauce, garlic, brown sugar and half of the jalapenos.
- Cook on low for 6-8 hours or high for 4-6 hours until the meat fall apart with a fork.
- Shred the beef using 2 forks.
- Drain most of the liquid from the slow cooker.
- Assemble your sandwiches.
- Place a slice of cheese down on your bun.
- Add the shredded beef.
- Top with the leftover bacon and jalapenos.
- Top with the crispy fried onions.
- Serve!

Are there other types of meat to use as a substitute? My husband is curious how it would turn out with pork tenderloin, because he likes all of the ingredients, but we donโt have any roast
Yes, you can use pork. We usually use a pork roast if cooking with tenderloin just make sure not to overcook so it won’t dry out
