We love omelettes for dinner when it’s going to be an easy dinner night. For just the two of us it’s a simple meal to make but when your having a crowd over we have found these omelette waffles work our great! You can make them ahead of time and just warm them in the oven.

The key is to have all your ingredients prepped so that you can just make one waffle after the next. In this case we kept it simple and used fresh chopped spinach, chopped green peppers, milk salt and pepper to taste and of course eggs. You can make these with any ingredients you want to use or have on hand. We usually use whatever we have in the fridge. It’s a great way to clean out the fridge.

These are easier and quicker to make than regular omelettes and they freeze well too. So they are great for quick week day breakfast. Just wrap in plastic wrap and defrost in the fridge overnight then warm in the microwave in the morning.  

Omelette waffles are great if your doing the Keto diet, watching your carbs or just trying to cut back on eating junky breakfast foods. These are much healthier than starchy muffins, donuts or breakfast pastries. When making these make sure you spray your waffle iron well with non-stick cooking spray especially if you use cheese in you delicious waffles because your waffles will stick! 

 

We wrote this recipe for making 2 omelettes or 4 pieces. The recipe can be easily doubled, tripled ect. When making this recipe for a gathering we make a big bowl of eggs and mix ins and the day before we cook up the omelettes then place them in a large resealable bag and store them in the fridge until your ready to heat them up.  Then we just place them on a baking sheet in a warm oven to reheat for when company comes. Perfect for your next breakfast or brunch!

Ingredients

  • 4 large eggs
  • 4 tbsp milk
  • 4 tbsp bell pepper, minced (more if you like)
  • 4 tbsp spinach, chopped (more if you like)
  • salt and pepper to taste

Instructions

  • 1. Turn on waffle maker and spray with nonstick cooking spray.
    2. Whisk eggs and milk in a small bowl and add peppers, spinach and salt and peppers. 
    3. Pour into the heated waffle maker and shut. Cook for about 2 to 3 minutes, or until cooked through.
    4. Removed from waffle maker, top with desired toppings if using and enjoy!

Notes

Recipe can be doubled and tripled easily or made for a crowd!
