Swedish Meatballs with Noodles

Swedish Meatballs with Noodles is what comfort food is all about. Decadent, rich and creamy homemade ahh-mazing must make dinner!

Swedish Meatballs are tender little meatballs made with pork and ground beef and  spices that bring all the flavors of these little meatballs together.

Have you made Swedish meatballs before? I know when I first made them I was a little unsure about adding things like nutmeg and allspice in a meatball. Don’t you kind of get nervous adding a strange ingredient to something when your cooking? but I knew we loved the taste of them because we had had them before. Now we love them so much!

We make these often and actually double the recipe so we can freeze a batch for when we don’t feel like cooking. We mix the meatballs, roll them out lay them on a parchment lined sheet pan and freeze them.

Once they are frozen we put them in a freezer bag and you have dinner almost ready for another night! Just simply fry them up, make your sauce and serve over needles, rice or mashed potatoes.

 

Don’t you love having a simple dinner ready for a night you don’t feel like cooking? We tend to do this with any recipe it can possibly be done with. some night are just busy or your just feeling lazy or maybe you just don’t know what you feel like. Open your freezer and you have a selection of almost cooked meals to choose from. 

 

We usually serve these scrumptious meatballs over noodles but you know what? We have actually served them in sub rolls with cheddar cheese then baked them in the oven to melt the cheese and they are heavenly! I know it may sound kind of crazy but we had some leftover and that just happened one night we had fresh rolls. We added chopped tomatoes and shredded lettuce and some red onion. So good!!

Ingredients

Meatball Ingredients

  • 2 tbsp olive oil, divided
  • 1 onion, finely minced
  • 1 lb. ground beef
  • 1 lb. ground pork
  • ½ lb. panko bread crumbs
  • 2 tsp. cold water
  • 2 eggs, beaten
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground allspice
  • salt and pepper to taste

Gravy Ingredients

  • ¼ cup unsalted butter
  • cup flour
  • 3 ¼ cups beef broth (more if needed)
  • ¾ cup sour cream
  • salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  • 1. Heat 1 tablespoon olive oil in a large pan over medium heat. Add onion and cook until onion is translucent cooking about 2 minutes.
    2. In a bowl combine ground pork, ground beef, beaten eggs, 2 tsp. water Panko, allspice, nutmeg,and cooked onion, season with salt and pepper.
    3. Mix together using clean hands and roll into about 24 1 1/2 in. meatballs or so .

    4. Add remaining tablespoon olive oil to skillet. Add meatballs in small batches to skillet being careful not to over crowd pan. Cook until all sides are browned about 4 minutes. Transfers to a paper towel lined plate.

    5. To make gravy, melt butter in skillet, Whisk in flour until lightly browned about 1 minute or so, gradually whisk in beef broth whisking constantly until slightly thickened about 3-4 minutes.

    6. Top with parsley.




Notes

NOTE: you may need a bit more broth if you like a thinner gravy
Stir in sour cream and season with salt and pepper to taste
Stir in meatballs and cook on low heat until heated through and thickened about 10-15 minutes
