Easy Chicken Marsala

Easy Chicken Marsala is a great fast and easy weeknight meal. Chicken Marsala has always been one of my favorite restaurant meals. It is always so tasty and flavorful. Sometimes we get it served with pasta and sometimes with vegetables since we try to watch our carb intake.

One of our favorite restaurants serves the BEST sauteed  spinach and garlic. We usually get a double order of that instead of pasta. Don’t get me wrong they make delicious pasta but that garlic sauteed spinach is out of this world amazingly delicious and it pairs really well with chicken marsala. 

On this night we chose asparagus. Also one of our favorite vegetables. We figured the chicken is dredged in flour so that’s enough carbs we don’t need any extra.  On a night that we do splurge we like linguine. When we make chicken marsala for company, we always serve it with pasta. What is your favorite pasta?

 We have a couple of different recipes for chicken marsala but this one is definitely the easiest and quickest so this is our go to for a weeknight meal. 

 

 How To Make Easy Chicken Marsala:

Pound the chicken with a meat tenderizer. 

Place chicken into flour, ensuring the whole breast is covered front and back. 

Place 1 tbsp oil into the skillet over medium heat. Once the oil is heated up, place the floured chicken breast into the pan.

Cook the chicken on each side for 5-8 minutes per side.

Next, slice your mushrooms longwise. Aso, trim the rosemary.

Add the remaining oil to the skillet and add mushrooms with the chicken. Cook mushrooms for 4-6 minutes or until tender and browned. Next, add the wine and rosemary.

Allow the wine to reduce slightly, cooking until it is nice and fragrant.

Add the heavy cream and allow it heat up.  Keep a careful eye on the sauce making sure it DOESN’T break. ( Add more cream if the sauce does break and it will bring the sauce back.)

Remove and plate the chicken covering the chicken with the sauce. This makes 2 servings. Double or triple recipe for a larger crowd! 

This Easy chicken Marsala recipe serves 2. That being said the chicken portions are pretty big.  You can cut the large breasts in half and make smaller portions if you like.

Ingredients

  • 2 boneless chicken breasts
  • 1 cup sliced mushrooms
  • 1 tsp fresh rosemary
  • ½ cup flour
  • ¾ cup good quality Marsala wine
  • ⅓ -1/2 cup heavy cream
